Greek Recipes

Tonight I made Greek Chicken, Spinach & Rice and Greek Salad. Greek food is my absolute favorite. I have been blessed to have a mom who cooks Greek and she learned from my Yiayia (Grandma). Even though my dad is the one who is Greek you would think my mom was too by the way she cooks. Here are some great recipes that are simple and delicious! Enjoy!!


Greek Chicken
2 pounds of thin chicken Breast
1/2 cup olive oil
2 cans chicken broth
1/2 cup lemon juice
Minced garlic 2 tsp
Seasoning to use: Salt, Pepper, Oregano, Paprika, Onion Powder, Garlic Salt


In a deep dish pour the olive oil, chicken broth, lemon juice all together. Add chicken breasts. Sprinkle both sides of chicken with seasoning. I don't measure just a good sprinkle of each. Bake at 350 for 50 minutes or until done.

Greek Spinach & Rice


1-9oz. box of spinach
1-can of diced tomato
2-cans chicken broth
3/4 cup of tomato sauce
1/2 stick of butter
2 tsp minced garlic
Medium onion chopped
1/2 c. rice


In a pot cook up the diced onion with olive oil, butter and garlic and cook until tender. Thaw out spinach in the microwave. drain juice set aside. Once onion is cooked add all other ingredients except for rice. Bring pot to a boil then add rice. Cook for 30-40 minutes or until rice is tender.
salt& pepper to taste
1/4 cup of olive


Greek Salad


Lettuce
Tomato 
Cucumber
Feta
Olives (optional)
Red Onion (optional)


Red Wine Vinegar
Olive Oil 
Seasonings: Salt, Pepper, Garlic Powder, Onion Powder, Oregano, 


Chop up all veggies. Add equal parts of olive & vinegar. Sprinkle very well with each seasoning and toss well. Taste then add more if needed. I never ever measure.
